Gluten-free energy bites

These are another go-to favourite!
Whenever I’m needing a quick burst of energy or I feel my tummy rumbling I grab an energy bite. These are gluten free, sugar free, dairy and soy free but full of flavour! These gluten-free energy bites are an excellent choice to satisfy your chocolate craving AND curb your sweet tooth - as they're sugar-free but have raw cacao!
1 cup of nuts (walnuts work wonderfully!)
1 cup of dates (make sure they're soft, otherwise soak them in warm water)
1 cup of seeds (sunflower, flax, chia)
1/2 cup of pumpkin seeds
3/4 cup of unsweetened coconut flakes
1/2 cup of dried fruit (your choice, but goji berries make these AMAZING!)
1/4 cup of raw cacao powder
Mix all ingredients together in a food processor. Then form into balls for bite-sized eating. No baking required, it's that easy!
