"Finally a grain-free, dairy and soy-free, high protein bread!"
When we start out on one of our adventures we need to ensure that we’re fully fuelled and can sustain our energy levels on the go. This bread does the trick but it does so much more! It's chock-full of nuts and seeds, with nothing but clean ingredients. What more can you ask for?!
Traditional trail mix is usually too processed (if you buy it) and includes peanuts - something which we tend to avoid.
Instead of bags of unhealthy trail mix we make a high protein nut bread and bring slices with us. It’s chock full of nuts and seeds and doubles as a substitute for bread. All you need is about two slices and it’s so filling! You won’t have the trail mix problem of eating the whole bag in one sitting - this is portion control at its best!! It’s a healthy way of controlling while ensuring you get your daily intake of nuts and seeds for the day!
We also enjoy eating this bread with soups or making a delicious sandwich. And where it's high protein it makes eating a vegetarian meal that much easier.
The recipe is super easy to make - I’ve even got it memorized!
2 cups of nuts (we usually use walnuts and almonds)
1 cup flax seed
3 cups of other seeds (usually a blend of sunflower, chia and pumpkin)
1/3 cup of olive oil
dash of sea salt
Mix together in a big mixing bowl and place into a baking dish for bread. Bake in the oven for about 1hr at 350 F. Take out and cool on a wire rack. Should refridgerate and it will stay good in the fridge for up to 2 weeks.
And voila! It's that easy!
